I'm trying to decide if I should buy an old Macbook Pro 2GHz Intel Core Duo 15.4" for $1300 or wait for the new Core 2 Duo Macbooks.

I don't need a new computer immediately(meaning that I can wait for an update for the Macbook) but what attracts me to the Macbook Pro is the graphics card because I will be doing some light AutoCAD and Pro/Engineer work under bootcamp/windows after I upgrade the RAM to around 1GB. Also did the old Macbook Pro have 512 mb RAM over 2 slots or 1?

If you're interested in discreet graphics, I wouldn't wait for the MacBook to be updated. I think it's very unlikely that Apple will move away from integrated graphics on that model.

I believe the 512mb MBPs shipped with 1 512mb chip. The refurbished models at Apple's site are definitely configured that way.
