Hello!
My mom currently has an iPhone 6 and I would like to give her my 8+. I believe the 8+ is unlocked. Would I just have to delete/erase all my stuff/data on the 8+ and swap out the SIM cards and she would be good to go? Any help is appreciated!

That should be fine. I would do a full phone reset, pop in her sim and she can then set it up as her own

Or I was thinking about surprising her with an iPhone 8 if she think the 8+ is too big. Would I just be able to walk into an Apple store and buy one unlocked and just swap the SIM cards? I’m a newbie at these things

Yes Apple sells it sim free (unlocked). They should have plenty of stock too. Just walk in and ask for one. You can pop in her SIM card and set it up at home.
