I am considering picking up an Apple TV but wondering if anything other than Quicktime supports Airplay. Does VLC or any other media player that supports a wide variety of codecs do AirPlay?

Airplay in Mountain Lion is different to on iOS.

In iOS there are two types of Airplay - video only (which works on an app-by-app basis) or full mirroring (which mirrors everything).

In ML, only full mirroring is supported.

This means that a) Every video app will work
but b) only recent Mac's are supported.

So check that your Mac is on this list before you buy!

Thanks. I've got a 2011 refurb so it should work fine. How does the resolution work? If its a 1080P video will it play at 1080P or the MacBooks resolution which is considerably lower?

It'll play at 1080p or the Mac's resolution. You can choose what you want the output to be. I think by default in the Display settings there is a checkbox selected that says "Match output display". In this case a 1080p TV for you would make the AirPlay show up in 1080p.
