As I was following the event earlier, I got the sense that there were deliberately some things being held back in the presentation. The most obvious point-outs would be the lack of multitasking or flash, but it seems to go to a deeper issue. Apple didn't make mention whatsoever of the version of iPhone OS on the device, and I think that's telling. Especially considering some of the new features which were shown by the wayside - such as the notification drop down lists for things like email.
I think the main reason nothing was said about the version of iPhone OS running on the tablet is because Apple is waiting until March to talk about that - coincidentally the same time last year they revealed iPhone OS 3.0. Once they hold their event mid-March to showcase the new iPhone OS, with possible Flash support and multitasking, it will casually be mentioned that when the iPad ships "later that month" it will include the updated version of the OS being shown. Also note how the Maps application made no mention of a partner, either in the demos or on the iPad page, perhaps to leave more time to work out a deal with Bing for maps/search.
