My plan is to get hte new iPhone but keep my jailbroken 3G (which has MyWi - letting me tether my iPad wherever I go- no 3G iPad needed!)

Then when I want to tether (since I know the new iPhone will have some super special non-jailbreak hardware), I will pop out the sim and put it in the old iPhone 3G.

Is it really that easy to switch between iPhones back and forth?
 
It is that easy to switch phones that are activated, but there's a chance the new iPhone could feature the new smaller sim card, like the iPad 3G. But if not you shouldn't have any issues.

My brother uses his sim card on an older phone he keeps in his pocket during work, and swaps out with his iPhone, no issues what so ever.
