I plan on migrating from my 10XS to 11 Pro using the new feature that won’t require a cable, computer, etc. Does anyone know what may not move over via this process? Will I have to manually move things like photos, music, iMessages, etc. via another process? Will I get to choose if I do not want certain things, like my music, to move if I don’t want?

iPhone What will not transfer when using the new phone to phone process?

You will likely have a choice of what you want to move over, however the default move over is everything.
There is little official documentation as far as I can see, but iMore did an overview that suggests it moves all you data across
After you enter some initial information the new setup is handsfree. The setup new devices since iOS 11 has been great. With iOS 13 they have kick it up a notch.
I’ve been hoping Apple would create this method and I look forward to trying it out when the time comes. No more using my Mac to do it as that used to be the fastest method for me. It makes sense to use the adapter instead of a lightning to lightning cable ( that doesn’t exist anyway) so that the devices can charge while the data is being transferred.
I used the phone to phone process to upgrade from an iPhone 8+ to a Xs Max last September, and it copied all my data flawlessly. I’ll be using this method again on Friday morning when I go pick up my new 11 Pro at my local Apple Store.
I have 14,999 songs on my iPhone. I’ll take a little cruft if it saves me manually triggering the download of all that music!
I'm guessing this would be a good way to upgrade without worrying about having a backup on 13.1 and the new phone being on 13? I'm going to be short on time tomorrow to get my new phone set up and want to get it going. I was thinking of just doing a setup as new and just having all my stuff come down from cloud minus apps and such. But this might be a better option...
Hmmmm... I doubt that. If it works anything like Move to iOS for Android phones it shouldn't matter. I haven't worked at ARS since March so never had the opportunity to try this feature out. I guess I'll find out tomorrow.
That’s always been a pain. No matter what tool I use it never copies over the music that I manually put on my phone. If this one does it’ll be fantastic.
When you are moving from Android to iOS then clearly the start position of your Android phone is unimportant.
But when going iOS to iOS there are real reasons you won’t be able to move to an earlier versions of the operating system. Moving to new versions may change or add meta data / structures that the old version of iOS doesn’t support. The simplest way to ensure a smooth transition is to mandate that you can only move to the same version of iOS or higher (moving up the version stack is easier than moving down...).
Even doing an iTunes migration (which is the closest to the iPhone migration tool) requires the new phone to be on at least the same version of iOS.
