If I right click on the "Macintosh HD" icon and "Get Info", I see the size of my hard drive increasing while I look at the "Used" section.

Is there a utility out there that hooks into the filesystem in some way so it would show me a real-time listing of files being created?

I'll use Onyx to get rid of some of the files, but I'm guessing there's over a gig of useless log files scattered about.

Look forward to any suggestions.

If it's actively increasing constantly, you may have a runaway log file that's filling up with errors. Try using OmniDiskSweeper to see what's taking up space on your drive. Just be careful deleting anything you're not familiar with.
