i cant seem to figure out which one it is and im trying to replace the sound

it is not if you listen the keyboard and backspace are different

is there any way to configure the iphone to play 2 or 3 different sounds when a key is pressed? eg: press 1) sound 1 second press) sound 2 press 3) spound 3

I just did a little typing on my phone and there is no difference between the backspace noise and typing a letter.

Try turning your volume up really loud to hear it. No difference.

Nope, they're the same sound. All keyboard clicks use the same sound.

You could code up something like this for a specific app, but there's no way to do this system-wide.
