What's the difference between a Celeron M and a Pentium M processor?

Is it a huge difference in quality? speed? lifetime?

Clock speed, FSB speed, cache. Pentium M wins on all counts (assuming you're comparing comparable processors). Pentium also has SpeedStep.

Celeron is bad old. not good old, like a nice solid G3. but smelly.
My first laptop was an IBM 1.3ghz Celeron some years ago. and it was top of its game too. Pentium M is very good, much nicer to the battery life compared to the power-draining Pentium 4 (not the Mobile version, the desktop IN a laptop version :p )
