I have a macbook air 2013 booting with black screen.
Mac mini (latest) and iMac 2011 booting with grey/white screen.

Why are they doing this separation? Is there any logic?

To be honest I kinda hate the black screen boot - looks terrible - can't really say sometimes is the MB Air is on or not especially in bright light situations...

Its something like the white/black iphone bootscreen whether its a white or black iphone. On macbooks its the bezel which says which color it should have. On macs without a screen I guess it is white.

Without seeing it (I prefer verbose boot): I guess that darkness – the black – can be perceived as smooth, as discreet.

Imagine the opposite: a flash of light, or a few seconds of brightness/glare when the power key is touched. That could be as disturbing/distracting as a loud startup chime.
