I ordered my 27" a couple of days ago but nowhere during the ordering process was I offered the chance to specify that a signature is required on delivery.

But going through the Whats Your ETA thread (https://forums.macrumors.com/threads/ordered-new-imac-2017-whats-your-eta.2048971/) I can see people in there have that as a delivery option.

When/where/how can I specify this? Is it specified via the Apple site, or specified via the carrier site once its shipped?

The item won't be delivered to your residence until it's signed for. If you want the carrier to leave the item in a secure location of your preference, under the work order on Apple.Com, you have to select pre-delivery options. From there, you can print off the pre-delivery invoice, sign and date it and attach it to the door. The carrier will leave the package based off your own cognizance and where you want the package left specifically.

And this is a default option were Apple automatically requires a signature for Delivery for most of their hardware line for iPhone/iPad/iMacs,etc.
