I need to instal windows 7x64 in UEFI mode on a Mac Mini which requires EFI 2.0.

Currently the Mac Mini has EFI 1.7, which is an ancient EFI implementation that does not work with a ton of hardware or UEFI opperating systems. It also prevents software developers from tripple booting or booting more than 2 opperating systems to test compatability.

Does anyone know when Apple might update the Mac Mini to EFI 2.0? If ever? I'm a little suprised they updated to an i7 processor and enabled it to work as workstation but haven't done anything about the old EFI issue.

To my knowledge, the updated Bootcamp that came with 10.8.3 uses some form of EFI to address 3 TB HDs.

As for Apple using UEFI: not likely.

What feature do you need, that requires UEFI, which doesn't work through BootCamp or Virtual machines? It is just triple booting?
