iOS 10 didn't really have anything about that, just that most stock apps could be removed (or basically hidden), but that's it. Perhaps ability to set different defaults might come in a future update, or perhaps not.
I don't see it ever coming to iOS. With the way the default apps are written into iOS it would probably be the same reason that you can't actually delete the default apps.
But then again, you never know.
