I know in Ubuntu they are in /var/log/auth.log but I can't find where they are logged on the iPhone. I have looked seemingly everywhere.

You've checked standard unix paths for logging like /var/log/ or /var/logs/?

Did not use SSH, but I think logging must be activated in SSH configuration.

yes i have made sure that loggings is active, and I have literally scoured the phone for where the logs might be.
 
Which loglevel do you set to?
Tried LogLevel VERBOSE?

Please also try to create an empty file in log-folder with the name of SSH logs like other unix distributions do. Perhaps SSH expects these files to write logs in? And also don't forget to restart SSH service or reboot phone, when you change something in configurations.
