Where are the back up files/ restore files located in OSX for itunes

I backed up my phone hourly, but when i go to itunes restore from back up I only see old very old dates. Where are my back up files for itunes kept on mac OS X, I am only seeing older restore versions, nothing from recent sync activity

If you don't mind me asking, why would you feel the need to back up your phone every hour?

sorry I just sync'd the phone, I assumed that was a back up. I am not finding any recent back up files however.

Sync'd sorry for getting the words confused.
Enter data on iPhone (note cards for an exam)... sync itunes charge phone up....Enter more data on iPhone, sync charge, enter data, sync.....

Even all my photos from the iphone are missing ( I used an old restore date I guess)

I have looked everywhere for the itunes sync back up restore files, I can not locate them. Any hints on where I can find these versions of the back up
