If I download ringtones from Cydia or "install" them, where are they on the iPhone? When I select a ringtone are they there with the rest of my ringtones? If I decide I don't like them, is it as simple as "uninstalling" them or do I delete them from iTunes (do they show up in iTunes)?

Thanks for your help...

Best way to remove anything installed with Cydia is to remove it with Cydia.

I was actually wondering the same thing. I installed a ringtone yesterday, but couldn't find it on my phone other than in Cydia... So I uninstalled it this morning.
