I have seen a lot of people have some apps that are in the menu bar at the top of the screen. (The place where the battery meter, time, airport, volume, etc. reside)

What are some good ones and where can I get them?

VersionTracker or Mac OS X Downloads are good places to start (the latter easily accessible from your Apple menu).

Then when you see an app that's interesting (lets say in the monthly Desktop thread) then just ask (there). :)

Some nice one (search for them on the two sites above): MenuMeter (though I prefer XRG on the desktop), MainMenu, Meteorologist, QuickSilver.
 
The eject button is from TinkerTool I think...?

Lots of functions can be added through the System Pref for that app.

That eject menu item is built into every OS X system.

TinkerTool could have activated it though, yes.

I would suggest Menu Meters as well, as this can show your RAM, CPU, heat, and input/output, and in different ways to suit each user.
