i honestly dont understand the interface of Apple Music at all like where does the stuff i make available for offline listening go to and how can i get rid of it again and how can i save stuff at once like lets say the top 100 of iTunes. how can i even see whats on my device or in the cloud. its like they just assume everyone in the world got unlimited data to waste

i dont even understand what happened to my iTunes Match library honestly

them theres this ENDLESS list of content all thrown together into the "New" tab

and people say the Spotify interface was confusing

The songs stay exactly where you found them when you made them available offline. Any playlists, album lists or artist lists that contain that song will continue to do so regardless of whether it's made available offline. To delete the local copies, you simply tap the dots on the album/list/artist/song and tap "Remove downloads".

Songs that are available offline are marked with a tiny phone icon to the right. Also, to show the list of all songs made available offline, click My Music > Artist/Album (whatever the top bar is at the moment) and then click "Show offline songs" (I forget the exact wording).

It's just a bit much for you to take in at once. Just relax and read the support documents on the Apple site.

all my iTunes songs I bought and were in iCloud have disappeared as soon as I add a streaming song. so far this is awful lol.

In the My Music tab. The only difference is that it's saved to your phone.

how can i get rid of it again
Tap the ... and choose Remove Download to remove it from your device, but to keep it in your library. Choose Remove from My Music to remove it from both your device and library.

There's no way. But you can go in to Apple Music Editors, choose a genre and add The A-List which is a curated playlist of songs for the week.

how can i even see whats on my device or in the cloud
When something is saved for offline listening, there will be a grey triangle with an iPhone symbol in the top right. For example:

In the dropdown menu in My Music there's a toggle for Show Music Available Offline Only show music stored on this iPhone.
