For some reason, the Screen Time section of the Settings app displays two different iPhones. One is obviously my current iPhone 11, and I’m assuming that the other version is my old iPhone XS that I’ve traded in.

I obviously signed out of iCloud and erased the phone when I traded it in, as well as removed any instance of the old iPhone from my iTunes account.

Any idea how I can get Screen Time to stop displaying the old iPhone?

I'm interested in this information as well. Still showing my old 7 plus in that list of devices, even though it was properly disassociated from my account before I sold it on. Notably I'm not seeing the new owner's Screen Time information (as I shouldn't), it's just that there doesn't seem to be a way to remove the device from the list.

It might be that Apple stores Screen Time information with embedded device ID and doesn't prune old Screen Time data, hence the selector continues to show old devices.
 
It saves the screen time data to your iCloud account, so you removing the device from your account does nothing to the screen time data. Probably done on purpose so people can‘t circumvent the downtime modes.
