Im currently learning to code and wanting to do more in the tech field. Im also planning on using it to edit videos. Im not sure If I need an M2 Pro or Max. I'm already set on 32gb of ram. I do plan on keeping it for at least 3 years. but I have no idea how much power I'll need.

If you're not sure, get the Pro. Don't be drawn into the marketing spin. M2 Pro + 32GB will give you a ton of performance.
The only reason to go Max is if every second counts and you are being paid for those seconds.
Yea im not getting paid for either yet. Video editing just for myself when I go on trips and what not. and I think the only gaming I'm doing is Minecraft lmao.

Given that the Max supports more external displays than the Pro, the OPs workflow may eventually warrant the third display being supported. If the OP is only using one display now though, then the M2 Pro is likely more than sufficient.

I plan on a 4Kmini led main monitor and a 1440p secondary

M2 Pro will be sufficient for your needs. You could probably get by on 16GB RAM, but 32GB RAM will feel much more comfortable. I would get 32GB if you can afford it.

I have the M2 Max and 32GB. I only got the M2 Max over the M2 Pro because I was offered M2 Max 30GPU 32GB at the same price as M2 Pro 19GPU 32GB. Like you I use my MBP for software development and for some occasional video editing.
