That should work, but it's not ECC. Go with OWC, they are a little more, but are ECC and their track record for Mac support is top notch.

Tempted, but the 2010 2.8GHz has four RAM slots, so I would need 4 x 8G to get 32Gb total.

The OWC kit listed above is 8 x 4Gb - suitable for the dual processor Mac Pro that has the 8 slots.

OWC's 32Gb kit for a 2.8GHz 2010 Mac Pro is $354.99, which is a fair bit more than the low $200s that I'm seeing for other 32Gb kits.

You didn't mention you had the single processor model. Well if you don't need ECC go for it.
 
I never understand when someone buys a high end machine and then won't spend the money to support it. It's like buying a Ferrari and then shopping for tires at Walmart.

As long as you buy the correct tyres that are within the specifications in terms of size and speed rating, then you can get them anywhere. It's not like buying Bridgestone or Pirelli tyres from Joe's Performance tyres or Ferrari will get you different tyres, unless you're buying the really special versions that are only available via selected dealers and that only pertains to the likes of the FXX, Veyron etc, which use special and magical tyres. The Mac Pro does not use special or magical RAM, so as long as it is within the specifications, then it's fine, although it does pay to use reputable manufacturers and suppliers.
