I want to install a SSD in my iMAC, but am unsure if which one to purchase. Which do you recommend for under $300 and will stand up to not having TRIM installed as per OSX. 128 GB min. but 256 is preferred!

It's not about saving $100. It's a generally accepted fact that the SSD drives provided by Apple are inferior to the latest SDD drives using the Sandforce controller. Especially when you factor in the fact that OSX does not support Trim. The stock SSD drive that you are paying over $600 for will degrade over time and become even weaker.
Even so, I don't get why someone would care enough to rip open a new $2,000 computer that's not meant to be opened and void the warranty just to have a better SSD that won't change your experience all that much...bizarre to me...but enjoy

Clearly you have not been keeping up with the times and that is why you 'don't get it'.
A quality SSD will in fact change your experience significantly!!! It is the single most effective upgrade you can make to any computer these days. Does that make it worth taking your iMac apart? Maybe, maybe not but at least try to understand the benefits fully before ripping people who are a) more knowledgeable b) more technically proficient with a screwdriver c) not afraid to go against Apple's 'we know what's best for you' mantra.
Right now I am leaning towards buying the corsair c300 128 Gb, but am not sure if it is the way to go. I keep reading good things about the intel ssd's but then I see others that say it is one of the slower options. In the back of my mind I still have $350 difference between that and the apple stock option.

I'll wait until the next generation SSD models arrive. While the better and more expensive SSD models have close to 30% over provisioning, eventually that provisioning will be consumed and the drive will start to lose capacity. Worse, as the capacity decreases the remaining good blocks will be hit ever more often.
How soon will the provisioning be consumed? It depends on how many disk writes are made and where they are made. But eventually it will happen and probably sooner than you think because Mac OS/X writes to the disk very, very frequently.
