Currently using the airpod pros and more often than not, people on the other end complain about the microphone being bad - either amplifying all sounds around me, or going in and out in terms of volume.

I see a lot of people have similar complaints about these airpods. Are there any better airpods suited for calls on the go?

Haven't compared but most callers say the quality of audio from my APP mics are pretty good. Bear in mind I don't live in a busy city with sirens screaming past so the mics really don't have to work hard at noise rejection. Your mileage may differ.

They are all bad because of BT. Literally any cheap wired earbud with a mic does drastically better which is why they are becoming more popular again. Lots of videos show this.

However, if you’re trying to stay with BT then usually the bigger headphones like the Airpods Max tend to be slightly better with sensors/mics they can fit due to the size.

I go on daily walks and if I'm walking on a street with cars going by at 60km, people have a difficult time hearing me (I've tried AirPods Gen 2/3 and AirPods Pro - same issue). Don't get me started on "Hey Siri..." - doesn't work even when birds are chirping near me.

Microphones on BT headsets amplify everything BUT your voice to other callers lolol. Being in a quiet environment is a must!

I have pro and max. They both are not great, but max is better. A whole lot of hello hello which i do not enjoy
A wired pair would be best for mic quality if that is your priority over convenience.

I have the same issue with my Airpod Pros. Whenever I try to use them outdoors people complain about my voice dropping out. I was just going to buy the regular AirPods since I didn't have noise cancelilng problem with my old ones, but they were sold out. So, is cabled airpods better than the blue tooth versions? And is there any significant difference between the Pros, regular 3. gen and 2.gen?

I have hardly ever used noise cancelling and don't need that:)

Cabled will be best
