Hey guys,

Recently, my iMac (late 2012, 21.5") died.

I have since bought a new one, but I would like to retrieve the data from my old HDD, and since that iMac won't boot (powers on, black screen, won't boot at all, and no startup chime or failure beeps), I can't load it in Target Disk Mode. Thus, it's looking like my best bet would be to open that Mac and pull the hard drive out.

However, according to this page, the HDD connection is a proprietary design. Does this mean I can't use a typical SATA to USB cable to connect to my new iMac? If so, what kind of cable or enclosure will I need?

That page is showing information in the case that the iMac has a proprietary Apple SSD installed. However, assuming you have the standard 1 TB hard drive, you'll be able to remove it and transfer the data to your new iMac via SATA to USB cable. This clearly shows the removal process of the 2.5" hard drive that comes standard in all Late 2012 iMacs.
 
The HDD in your model is a standard 2.5" HDD (laptop HDD). You can remove it and connect it to your computer using a SATA to USB cable which can be found on eBay.
BTW, If your screen isn't damaged, try not to get it damaged during the process, and sell it on eBay.
