Would it be better to get two 2.0 ghz dual core xeons in the mac pro with 4 gb of ram. OR, get the two 2.66 ghz dual cores with 2gb of ram. both ram setups use 4 sticks.

I'd say go for the 2.66Ghz wit the 2GB of RAM. If you ever feel the need, you can always upgrade the RAM easily.

Ram is (at least easily) upgradeable whereas the processor is not. No brainer for me.
