IMO, it might be Apple maps in my opinion. the UI is very clean and responsive compared to the blocky and "webshit" design of Google Maps.

I haven't really thought about it to be honest, but yes, I'd agree with your thoughts on Maps.
TextEdit, it has that perfect simple-yet-functional UI that would surely have Jony Ive weeping a solitary, minimalist tear of joy.
