I have the 11 inch Pro and I’m mostly just curious. I’ve had it set to “More Space” for a while, but trying the Default setting for a bit just to see how I feel about it.

I can be certain that a younger me would be loving "More Space" on my iPad Pro, but my aging eyes benefit from the chonky readable text of "Default" and I like not having to grab my reading glasses.

My iPhone mini is set to "Larger Text" instead of "Default" for the same reason, and no surprise, the 27" 4k monitor connected to my Mac "looks like" 1920 x 1080. I can read make out the tiny text on my Apple Watch Ultra Infograph face without glasses with my arm stretched, but I only ever look at it for a couple seconds at a time.

p.s. If the iPad mini had the ability to choose a "Larger Text" for Display Zoom, I wouldn't have traded mine in.

Default view, smallest text size, and request desktop website on by default. Great balance when switching between portrait and landscape while browsing the internet as well so it uses all the space on the 11”.

I agree. I can use "More Space" if I'm wearing my glasses or using the iPad closer to my face. Though, at my desk, it tends to be about an arm length away from me, so I need the Default zoom level mainly for that. I have larger text set on my iPhone as well. My eyes definitely aren't what they were five years ago, used to be able to use an iPhone mini without adjusting the text size back then.

I'm using Default on my 13 inch Pro.. I wear glasses, but I'm nearsighted so can see up close no problem. Smaller text is OK with me, but I like the default setting so it stays there.
