So I’m looking to buy one for basic music production. I do classic blues music so nothing insane like synths and stuff. I also occasionally do YouTube videos and such around 5 minutes of length. I’m. A little torn. I’ve heard the upgraded model other than having extra ports has an extra fan. I’m wondering if it’s worth going that route for longevity and such?

There are multiple posts like this, where for just $200-$400 extra you can have both. We're not talking thousands of dollars difference here.

These machines easily last for 10 years, so why worry about what is effectively $3.33 a month extra? The resell value is also higher for higher spec iMacs, so you will get around half of that upgrade money back.

GPU cores are irrelevant for your use case. As @picpicmac said, the extra USB ports are really useful.

Just go for the right-most model, add 16GB of unified memory and select the storage option you need. Your future self will thank you.

I would choose less gpu cores and bigger storage. And of course the higher end model with 4 ports and extra fan.
