If you just got a brand-new 3GS, the only software you can use to unlock is blacksn0w. It is available in Cydia or through the blackra1n jailbreak software. You should be aware of the following:

1) Your new 3GS probably has the new version of iBoot and will have a tethered jailbreak.

2) Some people have reported problems with WiFi randomly cutting out when using blacksn0w. This happens for about 10-20% of users, is completely unpredictable, and can usually be fixed by some combination of resetting network settings, turning airplane mode on and off, and rebooting. This is the result of a bug in Apple's Comm Center which blackra1n seems to exacerbate.
