So I know basically nothing about how the ram and memory specs work for running softwares.

I'm buying macbook pro 15" for video editing and other graphic design use.
Could anyone give an advice what I should get to run those adobe programs smooth and fast?

Any of them will be absolutely fine for pretty much anything, they're very high end machines...

For your use, purely look at the SSD size. You may find you struggle with 256GB so I would suggest 512GB (Video files take up a lot of room and you need to make sure there's enough space on the computer to work with them, you can archive later but ensure there's space to work from).

So get the 512GB, if you can afford it the 1TB. Next the GPU is usually a worthwhile investment if there's budget leftover, it won't make a whole lot of difference for you but it's cheap. So get the SSD first, then if you still have spare budget get the GPU.

Don't worry about the CPU unless again you still have plenty of budget, it won't make a noticeable difference for you but may as well have it if you can.
