Any should meet those needs for a while. Apple is planning to move to ARM based Macs starting next year. Will likely be gradual process in which ARM and x86 based models will continue to marketed along side one another for a while. The Macbook Airs are all somewhat limited by cooling systems. Not especially well suited to doing cpu intensive tasks that take a lot of time. I saw a comparison of a 2020 Macbook Air w i7 and the base model 2020 13" Macbook Pro do some kind of video rendering test; The Air took almost twice as long and the fans ran hard. The moral is, the Air, even with an i7, really isn't defined for that kind of stuff. But you're not doing that kind of stuff. I'd probably suggest the base model Macbook Air, maybe add the i5 upgrade since it's only $100. Do it with the idea that you're not spending so much now so upgrading sooner makes more sense. You'll never really future proof. No matter how much you spend, there's going to be new tech in 2- to 3-years that eclipses what you buy now. The low end Pro has a little better display. The resolution is the same but the Pro has a little wider color gamut (probably wouldn't notice unless side by side and looking critically; might be important if you were doing lots of image editing), it's also capable of being a bit brighter (probably only important if you work outside in bright light). For what you say you're doing I don't think you'd notice much performance difference between the base model 13" Pro and the Air. Seems to me the i7 upgrade in the Air is among the very worst ways to spend money. I'd ask yourself if 256gb is sufficient? Were it not for the Coronavirus situation I'd buy a base Air with i5 upgrade. I'm a statistician and do a lot of photo editing and have a 27" iMac for those tasks. The Air would replace an older iPad for travel. I like the iPad in a lot of ways but an Air would meet my needs better. At this point I'm really not traveling nor planning to travel anytime soon, so no real need right now.
