Silly question, but me & my PC are just about to come to the end of our annoying relationship... So I want to get a Mac... at last...

The thing is, I can't afford one out right with having to pay things off... So, I was looking for a Mac Mini on % Free Finance from PC world, but they don't stock them. So, I thought about the iMac, but they only do the 2.8Ghz iMac with the 256gb ATI card, & not the 3.06Ghz with the 512mb nVidia card.

I will only be using this for day-to-day use:
-iTunes
-Web browsing
-Handbrake Encoding (DVD + MacTheRipper + Handbrake = Playback on :apple:TV)
-Photo Editing

So nothing special, then possibly a bit of gaming with Vista as dual boot in the near future?

Do I really need the 3.06Ghz version, my sensible side is saying no, I will never use it to its full potential, my Male-I-Want-It side, say's I need it!?

You do not need the 3.06Ghz for the kind of day to day usage you specfied. I've used a Mac Mini to do all that stuff and it worked great. However your last specification about gaming in Windows Vista pretty much says you have to go with the 8800 video card equipped iMac for good performance. If you cannot order directly from Apple due to your finances then you are stuck :p buying a 3.06Ghz system.
