Maybe a stupid question, but here goes.
I’m looking into replacing the HDD spinners with some SSDs, is there any makes to avoid? Etc.
Any advice would be appreciated

Do you mean DIY NVme to USB-C or Thunderbolt 3 external SSD storage? I think we would prefer to tell you what works well rather than list all that you should avoid.

Hi, I was looking to use the SSDs for Open Core as I have nvme drives and going by what people are saying they don’t recommend using a nvme drive to put OC on.
So, I was going to replace the platter drives I have already (in the sledge) for SSDs.
This will be for a cMP 5,1

I have on my Mac Pro 5,1 macOS Big Sur 11.2.3 and Opencore running on Samsung 870 EVO 2.5" SSD:

I did have an NVME Samsung 980 Pro 1TB NVME in a highpoint 7101A. That combination didn't work well - I had very high speed performance and lockups and then it stopped booting at all. The cooling fan noise of the 7101A was also very loud. That was using macOS Mojave which had been cloned from an existing platter drive.

I have a Sonnet card coming soon and I'll try the NVME again with a fresh Big Sur 11.5.2 installation on that and see if that works any better.

I’ve been fortunate on the noisy fan issue with the 7101a it’s not that noticeable.
Mojave is on the nvme card which boots every time with out fail.
I know this is a bit off topic, but, which would be the better way to install OC?
By Martins Package or by OCLP?

#avro707 is one of the 'few' people who have had success with an 870 drive.

I would avoid any Samsung QVO drives (bad compatibility) and also Samsung 870 drives.
Samsung 840/850/860 evo/pro are ideal.

You will also need new drive sleds to fix to.

What I did with the 870 was used some old-fashioned adaptor frames from an old PC build to fit the 2.5" SSD in the second superdrive bay (which I don't use).

All of my 4 normal SATA bays are empty.
