I have on my Mac Pro 5,1 macOS Big Sur 11.2.3 and Opencore running on Samsung 870 EVO 2.5" SSD:

I did have an NVME Samsung 980 Pro 1TB NVME in a highpoint 7101A. That combination didn't work well - I had very high speed performance and lockups and then it stopped booting at all. The cooling fan noise of the 7101A was also very loud. That was using macOS Mojave which had been cloned from an existing platter drive.
I have a Sonnet card coming soon and I'll try the NVME again with a fresh Big Sur 11.5.2 installation on that and see if that works any better.
