I believe the bare minimum to use on your Mac Pro with Boot Camp is XP with Service Pack 2, but as far as the virtual machines I'm not sure.

I'd advise using XP Pro if you go XP, as it's much easier to customize and control. Plus the remote controls make it a lot simple when away from your computer to fix things.

Unless you specifically need pro just get XP home there are very few differences. Also go to Newegg.com and buy the OEM edition of whatever Windows you choose as it is far cheaper than the retail version, the only difference is that the OEM is locked to that computer whereas the retail versions licence can be transferred. As long as you wipe it off the old computer.

Now if you are on a corporate network then I am afraid that you do need XP Pro or Vista Business.
edit: Also if you have an 8 core Mac Pro than you need Pro to utilize all processors, since I believe the Home edition can only see one Processor. By this I mean one 4 core processor not just a single core.
