Lets assume my kids want to watch a movie and it's streamed via ATV from my iMac, whilst this is been done can i still use my iMac for every day / all other activities??

Should work fine, assuming it's a fairly recent iMac (they've been made since 1998 )

Of course u can! U can even play anything u want from your itunes library on your imac, while your apple tv plays(streams) something totally different.....Your imac doesn't get affected at all.......
