It seems you have to lock the phone and clear them from the lock screen. I tried Googling, but yielded no results. Am I losing my touch already? I'm only in my early 30s! Hahah. Help.

Why can't I figure out how to clear notifications from the "cover sheet"?

You can do it from the notifications screen (the one you see when you pull down from the top when you're unlocked) by hitting the X's a day at a time or 3D touching any one of the X's and choosing "Clear all Notifications"
At the locks screen version only the notifications since the last time you unlocked are shown by default. To see rest, drag up. At that point clearing is the same as the above.
Right..but I used to be able to swipe down from the top when the phone is locked and clear out all of my notifications in little clusters. Those "x" buttons don't appear anymore. I can individually clear out each notification by swiping left, but when I have more than 4 notifications it gets to be a little annoying. Why would they remove this functionality?! See below:
Yes, in the default lock screen view only the notifications since you last unlocked, recents, are shown. If you unlock and lock again you'll see those are gone from that view. Theyve actual been archived, which you can see by dragging the screen up where you'll see "earlier today", "yesterday" and so on, just like the unlocked version. Those you can clear as normal.

You're right - because I just swiped down from the top with the phone locked and now I have an x button.
I think we're talking about different things there if I'm understanding you correctly. It sounds like you're talking about dismissing individual notifications? And on the unlocked cover sheet too.
I'm talking about swiping up (not down) on the screen, on the lock screen (not the unlocked cover sheet) to see and dismiss groups of non-recent notifications.

You should be swiping up, rather than down. Maybe if you post screenshot it'll be easier to determine what's happening.
I'm talking about the X that's next to the day allowing you to dismiss all notifications for that day (it was a button that said clear in 10.3 I believe).
Because I get to the notification screen by swiping down from the top. Swiping up from the bottom gives me the control center?

Gotcha, helpful, however as I said, I've seen some cases where the X to dismiss that days notifications was there, and some when it wasn't (and closing the notification screen and re-opening it fixed it).
Haven't seen that over the beta period but it wouldn't surprise me. Still some rough edges.
I'm with the OP on this. To perhaps explain more clearly to people what we're seeing:
When the screen is locked, you generally see 2 categories of notifications: "Recent" ones, which do NOT have an x above them, and "Earlier Today", which do. In iOS 10, while on the lock screen, you could clear out all of your Recent notifications by swiping down from the top edge of the screen and opening the Notification Center. After that, there would be no notifications on the lock screen. With the iOS 11 lock screen, this is no longer possible.
*If* you have the Earlier section with the x, you can deep-press the x and hit Clear All, which clears both Recent and Earlier notifications from your lock screen. But if you have a bunch of Recent notifications and no Earlier, the only way to clear them out is by unlocking and going to the home screen. This is less convenient than a simple swipe down from the top.

By far so convoluted implimentstik. What’s wrong with the old way? Jeeez Apple. Sometimes they make changes for the sake of saying it’s new but not better. Like the music app is horrible now. I’m going with google music for music management now by I digress. They keep updating to make things different for the sake of being “new” but not necessarily better.
