trying to buy iPhone on Apple.com and seem you are force to pick a carrier moving forward which is crazy

I'v bought a few iPhones via the Apple page and was never forced to pick a carrier. That would be crazy indeed.

You sure, you are on the normal Apple webpage and not going over an affiliate link or carrier link or whatever?

If I am not mistaken, if you are not buying outright, you have to pick a carrier. Apple changed the policy.
Correct.
If you choose to finance it, you have to choose the carrier.

If you buy it outright, you can connect to any carrier later.

Guess if you want to use a MVNO or other non major carrier, the buy it in full is the only way. Unless you go to their site and finance it thru them ?

Maybe it's way to have the device unlocked from Apple and locked if you use a MVNO ?

I've always bought my iPhones outright so I'm a little confused by this. When people are paying in installments, are the carriers then the entity that's paying Apple upfront for your phone? Wouldn't you get better deals buying directly from the carriers since they always have promotions going?

They have removed the option to finance iPhones not attached to one of the three major carriers. This even applies to Apple Card. I suspect Apple is getting kickbacks from the carriers for this decision
