I would pay for a jailbreak. This would be great motivation for them to work on this, instead of paying apple.

This has been proposed on Reddit before and here a few times.
The simple answer is that the best amount of money that willing donations could raise for someone to do this is peanuts in comparison to what Apple or other third parties can and will offer.
When you start making it about money then it's going to be about who has the most money to give. And that's not the JB community.

do you think so? What about asking 5 dollar for a jailbreak per device? Thats alot of income if alot of users are jailbreaking.
Apple sells millions of iPhones every year. A very small percentage of those why buy one jailbreak.
The JB community can be measured in maybe 10s of thousands and I am being generous.
If you somehow motivated every last one of them to donate $5 you'd still have less than $500,000.
Exploits can command millions.
On the face of it your idea makes sense, but it's predicated on motivating everyone to give. A lot of them would, but a lot of them won't.
Certain long held beliefs and opions and generally people who just won't care or will 'wait for the free jailbreak'.
We won't even get into the aspect of whom to trust to hold the money, how it would be dispersed, etc.
JBing of mobile phones as such is not illegal, it does however violate the Apple EULA iPhone owners agree with when using an iPhone.
When you start asking money and therefore providing a service to people for willingly violate that agreement and offering tailor-made software to alter Apples copyrighted software I would not be surprised if Apple went after you legally.
Apple did try to go after JB as a whole and failed, but a more personal approach might be successful and even lead to unwanted changes in the DMCA.
Sony did sue Geohot when he offered for free a JB for the PS3....
Concerning the money, after several JBs with a donation environment the Evad3rs Dev team tried to get a commercial partnership going with Chinese Taig for their iOS 7 JB, it blow up in their face when Taig added a piracy invested app store with it and they severed ties with Taig.
After that the US JB scene all but died, Devs were either discouraged by the above feats, hired by Apple or just moved on to other things in life.

They wont sue individual owners at least in europe. They can have all the small letters and agreements they want, we already had a court case here that you as consumer decide how to use your devices.
Jailbreaking is legal in the United States.
Don't know who Apple would sue successfully in light of that here.
For now... the exemption runs until next year and only for mobile phones and tablets, not for any other equipment so excluding AppleTV etc.
