I have two Shortcuts set up that do this for me. The first is called 'Listen', ie I want to listen what's going on around me, so I want to pause the music and turn on transparency.

The second is called 'Stop listening' which turns ANC back on, and resumes the music/podcast.

I have the first one assigned to the action button on my Apple Watch Ultra, but I usually invoke them with Siri.

So, "Siri, Listen" and "Siri, Stop Listening"

The only problem with this setup is it requires talking or pressing an action button on a different device. I want to just press the button on the airpods to do this automatically.

It's a good workaround for now though.

I think that would be a handy option. We should submit the suggestion to Apple feedback. I only occasionally turn on noise cancellation --when my gym is playing their own music louder than normal-- and twice I've been walking home unaware that I was unable to hear traffic noise until I remembered ANC was on.

Yeah - it's just a workaround but it'll do for now. A partial way to solve this would be to give the option of giving the long-squeeze on the AirPods the ability to run a shortcut, or better to add a new option in the AirPods settings to have make ANC/Transparency work in conjunction with Play/Pause.
