I ordered 2 days ago a M1 Max 24GPU // 32GB, I think for the 14" this is the most wanted configuration if you decide to go M1 Max and/or you're in the 32GB boat, since it's clear that the performance offered at M1 Max 32GPU with that chassis is limited by Apple itself, so the smartest move is to go 24GPU on 14", as the previous poster stated.
For me M1 Max 24GPU is a win/win for performance/balance at M1 Max, you get double memory bandwidth, dual encoders and decoders and the ability to connect to more external displays, not to forget, the GPU array won't expel those high thermals or reduce the battery since there are 8 GPU active cores less.
I'm swapping a 14" M1 Pro 16GPU / 32GB for this new one, I'll have some headroom for the next 5 years I plan to keep the computer, I won't be using the GPU as much, but if needed, it'll be there, as well as the rest of the perks. Since you're already on the 16" boat, if you're not planning to use more GPU power (you'll have plenty for your uses as it seems) or you know it won't be needed, I'd invest those 200$ extra into the AppleCare+ and not ordering the 32GPU, but that's just my opinion.
On the other hand, I must admit that "buyer's remorse" is the worst thing you can face, happened to me, I used the christmas period in-extremis to swap my current machine to the new one, cause I was kinda obsessed if I should swap it or not, if I really needed it or not ... so if you're having these thoughts, is highly possible that mentally you've already purchased the 32GPU option, you just have to embrace it and materialize it, my 2 cents with this, if you're experiencing it ... is do it as fast as possible, like removing a band-aid, it will peace your mind.
