Simple supply and demand. There's nowhere near as many Mac gamers as there are Windows gamers. Lower demand means lower quantity production runs which equals higher production costs.

Not to mention it's a different company releasing it. PC + EA = inexpensive over time. Mac + Aspyr = price plus port license cost. In this case Aspyr releasing it. Unfortunately the cost in relation to licensing it to Mac users carries a price.
Personally, I don't mind the extra cost since it supports the 'need' for Mac games that some people say is not there.
Aspyr is doing a fantastic job supporting the gaming community by porting games over to Mac. Yes it takes some time but they're one of the very few (if the only) company doing native ports of games rather than EA's cheap a$$ wrapping games with CIDER. I love the fact they're native ports. The little extra cost is worth the better performance you get with a native port rather than a 'wrapped' game.

Feral does native ports (plus they always put in OS X enhancements) and so does Macsoft, not to mention Virtual Programming (except for X3). Fortunately, Cider ports are still the minority.
