iPod Why does it take so long to convert 320 kbps to 192 kbps?

Excuse the ignorance, please. I didn't have this issue prior to upgrading my Ipod Touch 3rd generation to the new iOS 5.0.1.
Prior to updating I was able to convert 320 kbps to 192 on average 6 seconds per song and now it's 4-5 minutes per song.
Any ideas to why this is happening and how to correct this?
