So I set up my personal account (my own domain), and it seems to be receiving new messages as soon as they come in, not at the set interval of checking every 30minutes. Why would that be?
 
nope - it'll just be when I'm using the ipod part, or even if it's just sitting on the desk..
 
anyone? it's DEFINITELY getting mail from my personal server the second that the mail comes through - and I have the mail settings to only check once an hour......

Mine does this too... especially if it is connected to WIFI, I have mine set to check every 15 mins. Most of the time, the iphone gets the mail before the desktop! And the desktop is set to receive every 1 min.
 
Same thing is happening with me, via Gmail. I set it to check only once an hour (to conserve battery), however it gets them almost instantly. I thought it was odd but I didn't mind, doesn't seem to be killing my battery at all, even if it is checking constantly or something.
 
yeah same with me - it's not killing my battery (though maybe my battery would last even longer if it wasn't doing this?? who knows?)

BTW I switched these accounts over to Exchange settings, so now it's no longer POP3 as stated above....

I've experienced the same thing.

I use Thunderbird and I get gmail on my iPhone before it hits my desktop.
