Edit: The correct question would be, Why does iTunes automatically download apps you had on your iPhone, but then deleted.

After connecting to iTunes, it starts to automatically download apps you've downloaded, but then deleted.

I think if you purchase apps on phone, delete them and then have itunes setup for auto download apps it will autoatically install them as it notices the app as not installed on your phone.
 
Next time you sync with iTunes, do it by USB. After your device is recognized by iTunes, go into the Apps tab and UNcheck the apps you do not want installed during the sync. From that point on, iTunes will install/sync only the checked apps and you should be OK.

HOWEVER, it pays to check the list each time - or at least periodically. App updates can mess you up and re-install an app. iTunes will then continue to sync it.
 
Ish. It just completely rearranged my whole iPhone. :( Grrrrr.

I'm not going to mess around with iTunes again.

I'm sick of this ish. Every time!

And it's still downloading apps I deleted why?? That is so dumb.

go to preferences then store and untick automatic downloads
