instead it just uses the standard "infinity" power cord adapter which looks ugly! Yeah I know it's not a portable PC, so it doesn't need a Magsafe, but come on!

Why doesn't unibody Mac Mini come with Magsafe adapter?

Partially. The unibody Mini has an integrated PSU. It needs 110/230V rather then the 5/12/14V that is provided by the MagSafe - and you don't want to connect these via MagSafe. Beside, it comes with an Apple-grade white power cord, which isn't really that ugly.
A. Why does it matter if it's ugly? You don't see it.
B. You shouldn't move it while it's on, hence eliminating need for magsafe.
C. It has no battery, and magsafe is easy to disconnect, so if you accidentally bumped the wire, there goes any unsaved work.
It's just not practical, and would actually be counterproductive.

Just imagine the consequences of a "powered" high voltage MagSafe connector flopping around in the vicinity or your solid aluminum mini.
