then what prevents the mini from handling 2560x1600 using the hdmi port? OSX restriction?
Isn't the max res of HDMI 1920 x 1200? I know HDMI = DVI + Audio, and you need a DVI + USB Video adapter to get any higher resolutions...
Maybe I'm missing something, but if you want to use the dell U3011, why not just use a DisplayPort cable (miniDP to DP)?

Thunderbolt can be added to existing products with relative ease. Thunderbolt driver chips fold the data from these two sources together, and split them back apart again for consumption within the devices. This makes the system backward compatible with existing DisplayPort hardware upstream of the driver.
^Since the connector is the same you could even just use a mini-DP to DP cable. MiniDP plugged into the thunderbolt port and DP end plugged into the monitor.
