I have Mail uninstalled and spark installed and spark is set to default yet apps like Apple notes are still requiring me to use Apple Mail.

Have seen this in a couple of the betas. Some Apple default apps will ask for the Apple app even if you have something else defaulted.
I have not really tested this in a regular release.

I’m not using the beta, I’m using the latest official release 14.4.2.
 
I got tired of Mail not showing junk mail in my outlook account. I almost missed out on some study groups that were paying some decent coin. I switched to outlook.

In Settings > Mail > Accounts > Fetch New Data > (Select your account), under ‘pushed mailboxes‘ do you have the tick icon next to the Junk folder?

In iOS 13 I was wondering why deleted items, sent items and junk mail folder weren’t in sync across devices. It turns out the mailboxes weren’t ticked in the above Settings location on each device (only inbox was). Ticking these mailboxes resolved my sync issues and I also started to get notified of emails to the junk folder as well as the inbox. (For junk mail, I believe a sound and notification banner appears, but there is no notification badge number on the app icon.)

This is with both a Hotmail.com account and an Outlook.com account, both added to Mail app by selecting the Outlook option and logging into the Microsoft account. (Not IMAP.)

Still working fine on iOS 14.
