Why is this still happening? (Apple Mail)

I have Mail uninstalled and spark installed and spark is set to default yet apps like Apple notes are still requiring me to use Apple Mail.

Have seen this in a couple of the betas. Some Apple default apps will ask for the Apple app even if you have something else defaulted.
I have not really tested this in a regular release.

I’m not using the beta, I’m using the latest official release 14.4.2.

If you install Apple Mail, does Notes then use it or does it finally realise it's not the default and use Spark?

I got tired of Mail not showing junk mail in my outlook account. I almost missed out on some study groups that were paying some decent coin. I switched to outlook.

Reinstalled Mail and switched the default back to spark, uninstalled Mail and it’s now working again as normal.

In Settings > Mail > Accounts > Fetch New Data > (Select your account), under ‘pushed mailboxes‘ do you have the tick icon next to the Junk folder?

In iOS 13 I was wondering why deleted items, sent items and junk mail folder weren’t in sync across devices. It turns out the mailboxes weren’t ticked in the above Settings location on each device (only inbox was). Ticking these mailboxes resolved my sync issues and I also started to get notified of emails to the junk folder as well as the inbox. (For junk mail, I believe a sound and notification banner appears, but there is no notification badge number on the app icon.)

This is with both a Hotmail.com account and an Outlook.com account, both added to Mail app by selecting the Outlook option and logging into the Microsoft account. (Not IMAP.)

Still working fine on iOS 14.

At the beginning of 2020 I switched to Spark and have never looked back again. Works flawlessly (for me) 0 issues.
