To be honest, I think unlocking an iPhone is much easier than unlocking a Sony Ericsson, Nokia, or most other phones.
The only phones I've managed to unlock successfully (without contacting my operator) was an LG Chocolate through engineer menu, and an HTC TyTN with a firmware reset.
When I tried with a Sony Ericsson, I promptly came to the stumbling lock of needing to get a specialist connector for it.
If all phones were like the LG; just a key combo when starting up to get into the engineer menu, then taking the lock off, then I'd agree with you.
Also remember, the iPhone is only really supported by O2 in this country, so it shouldn't be easy to unlock it. But the pwnage tool has made it extremely simple. The difference from first jailbreaking my iPT using Terminal and SSH to using the pwnage tool is immense, its about 5 clicks and a cup of tea to get an iPhone which works with all of the networks.
