When I send mail it may take up to 8 hours before the mail is received, doesn't matter time of day.

This can have many factors involved. Try sending an email to yourself to see if it’s also that slow.
If it is, try sending from a different network, a different device and a different email provider to further narrow down the root cause.

I sent some mail to myself and checked online via computer and none showed up, but did show in the sent folder
tried hotmail and gmail

You don’t need a computer you should check on the device in question.

See how long it takes for your outbox to clear. Should be quick.
Then your test email should appear in the sent folder.

The same device should then be able to receive the email pretty much immediately.

Go from there, best success!

Outbox still shows items I tried to mail
Which email service are you using? Provide screenshot or fetch settings. Settings>Mail>Accounts>Fetch new data>Select email account... make sure it is set to push if available or go back one screen and check your fetch time frame. See my screenshot.

Also, try removing the account and re-adding.

If stuff sits in your outbox for a long time, see if changing networks speeds it up. If not, the issue might be with the email service.

I notice in email instead on having my return address in the FROM it has unknown address ..my return email is in there too but it defaults to the unknown one each time...anyway to make my true return address the default?

Large attachments can also cause email to sit in the outbox for a while before going out. But it sounds like the email software on the device may have become corrupted. I would hard reboot the device, then try the self email test.

Sent myself an email from the email app to myself in the email app. Message arrives in approximately 2 minutes.

I’d suspect OP is having an issue other than with email app itself.

Maybe it’s best if you make a screen recording of your entire process so that we don’t have to continue guessing for the next foreseeable future.
