Does this JB also unlock your phone, making it accessible to other carriers?

ATT has not been agreeable to unlocking my phone. I dont want to switch carriers.

I want to use Digicel in Jamaica while I am there on vacation.

I think you might be confused on what the jailbreak does.

The Jailbreak is just code that adds and app to your device. This app (Cydia) is a non-Apple App store. Where you can go to install apps or other tweaks. It doesn't hurt to give it a try, if you don't like it, just restore with iTunes and it's gone.

JB and add, biteSMS, SBSettings (or NCSetting), InfiniDock and FolderEnhancer.

Play around with those for a week or so and you will be hooked.

Definitely hoping to give it a go. This has been my first iPhone (as the iPhone 5.)
